This pesto is made with green tomatoes, which are harvested before they are fully ripe. This gives them a slightly tart flavour that pairs well with the sweetness of the cashews and nuttiness of Parmigiano Reggiano. Thanks to the use of green tomatoes we have managed to limit the use of oil and salt and still create a thick and tasty pesto. This pesto is made using high-quality ingredients and is free from artificial colours, flavours, and preservatives.
